Body count has long been the yardstick by which we measure calamity. There were the 58,000 U.S. lives lives lost in the Vietnam war; the 1,496 souls who perished on the Titanic. In the hours after the September 11 attacks, when the death toll was not known, then-New York Mayor Rudy Giuliani famously said, “The number of casualties will be more than any of us can bear, ultimately.”We are, once again, trying to bear the unbearable as the U.S. today surpassed 200,000 deaths caused in the still-rampaging COVID-19 pandemic. We remain, as we have long been, the world’s hardest-hit country, with just 4% of the global population but roughy 21% of both deaths and overall cases; it’s a dubious distinction that was fast in coming.

Low Carb Fried Chicken

This low carb fried chicken is crispy, crunchy and so easy to make.

It tastes like carby fried chicken, but you’ll be pleased to discover that the carbs are negligible, without sacrificing the flavor.

How To Make KFC Style Keto Fried Chicken

Start by marinading the chicken pieces in a mix of egg and sour cream. Both work to tenderize and develop flavor in the chicken. I used chicken breast in this instance and chopped it into strips.

You can marinade for a few hours or overnight for a deeper flavor.

Then, make up your crumb mixture by mixing together equal parts parmesan and almond flour, together with your herbs and spices of choice.

Mine are simply salt, oregano and paprika, but you could also add in your own choices from pepper, garlic powder, onion powder, basil, ginger, celery salt, thyme or mustard powder.

Dip the marinated chicken into the crumb mixture and then heat oil in a frying pan. Once the frying pan is (very) hot, add the chicken into the frying pan and cook until golden on both sides.

I like to serve the chicken with a simple side of spinach or other greens, to balance the delicious richness of the crispy chicken.

Low Carb Fried Chicken Recipe

  • Chicken Breasts or Thighs
  • 1 Egg
  • 2 Tablespoons Sour Cream
  • 1/2 Cup Grated Parmesan
  • 1/2 Cup Almond Flour
  • Salt
  • Oregano
  • Paprika
  • Pepper or your herbs/spices or choice
  1. Chop the chicken into strips.
  2. Whisk the egg and sour cream together in a bowl.
  3. Move the chicken to the bowl, stir well to combine and move to the fridge for a few hours or overnight.
  4. When you’re ready to cook, heat oil in a frying pan and while it’s heating, make your crumb mixture.
  5. In a bowl, combine together the parmesan, almond flour, salt, oregano, paprika and your herbs and spices of choice.
  6. Remove the chicken from the fridge and dip each piece into the crumb mixture, rolling it around so it’s fully covered in the crumb.
  7. Once the frying pan is hot, cook the chicken until golden, then carefully flip and cook until golden on all sides and cooked through.
  8. Serve immediately and enjoy.
